Work quickly to avoid the yolk from lumping because of the sugar.

Cooking time will vary depending on the shape and material of your ramekins and your water bath.


Change the flavour!
Cardamom Crème brûlée...


Replace the vanilla with 2.5 ml (1/2 teaspoon) of cardamom seeds and let steep covered for 5 minutes. Strain the flavoured milk through a sieve lined with cheesecloth and continue with the recipe.

Cinnamon
Replace the vanilla with 5 ml (1 teaspoon) of cinnamon and let steep covered for 5 minutes. Strain the flavoured milk through a sieve lined with cheesecloth and continue with the recipe.

Ginger
Replace the vanilla with 3 or 4 slices of fresh ginger. Remove from the cream before adding to the egg yolks.
