In a pot of boiling water, cook the cauliflower until tender. Place in ice water to stop the cooking. Drain.
In a food processor, purée until smooth, adding water as needed.
Cauliflower is the most digestible vegetable of the cabbage family. You can cook it in milk instead of water, and add a piece of bread to absorb the cauliflower smell. Remove the bread before you put everything in the blender.
