  1. In a bowl, combine the butter, lime zest and juice, chipotle pepper, and reserved adobo sauce. Season with pepper.
  2. Spread over warm corn on the cob. 


Note

Chipotle is a bright red ripe jalapeño, which has been dried and smoked.

Canned chipotle (Costeña brand) can be easily found in the Mexican product aisle of most grocery stores.
