  1. On a work surface, supreme the citrus by removing the skin, pith and membrane with a knife and divide into skinless sections. Cut the grapefruit sections in half if large. Keep the citrus juice for another use.
  2. In a bowl, cover the bread with cold water and let soak for 2 minutes. Gently squeeze dry with your hands.
  3. In a salad bowl, combine all of the ingredients. Season with salt and pepper. Serve immediately.


Onions are soaked in water for a milder flavour.

  1. I have now served this salad twice. It is delicious, easy to make and wonderfully different. You can easily substitute fresh chives for the green onions, especially right now with them being spring time fresh. Be sure to use a firm Greek feta for that wonderful crumble and salty hit.
