Ingredients

Spice Blend
- 1 tablespoon (15 ml) paprika
- 1 teaspoon (5 ml) chili powder
- 1/2 teaspoon (2.5 ml) onion powder
- 1/4 teaspoon (1 ml) celery salt
- 1/4 teaspoon (1 ml) ground pepper
- 1 cup (250 ml) grated Parmigiano-Reggiano cheese

Preparation

- With the rack in the middle position, preheat the oven to 180 °C (350 °F). Line a baking sheet with parchment paper.  
Spice Blend
- In a bowl, combine all the spices. Set aside in a small sieve.
- On the baking sheet, spread eight 15 x 5-cm (6 x 2-inch) bands with each approximately 15 ml (1 tablespoon) of Parmesan cheese. Bake for about 7 minutes or until the cheese is lightly browned. Right out of the oven, sprinkle the spice mixture over the chips. Loosen the chips with a spatula and place them diagonally on a rolling pin to curve them, if desired. Let cool and unmould. Continue with the remaining cheese.
