- In a bowl, combine all the ingredients. Set aside.
- With the rack in the middle position, preheat oven’s broiler.
- In a large ovenproof skillet, brown the meat in the butter and oil for about 4 minutes per side. Season with salt and pepper. Spread the pistachio crust on one side of the chops. Place in the oven and bake until the crust begins to sizzle and the meat is just pink. Let stand for 5 minutes and serve with root vegetables, of your choice.
You can use the same pistachio crust on thick pork chops.
