Apple Squares

Ingredients

    Oatmeal Crisp

  • 1 1/4 cups (310 ml) quick-cooking rolled oats
  • 1 cup (250 ml) unbleached all-purpose flour
  • 1/2 cup (125 ml) brown sugar
  • 1/2 cup (125 ml) unsalted butter, melted
  • 2 tablespoons (30 ml) maple syrup

    Apple Filling

  • 1/2 cup (125 ml) brown sugar
  • 3 tablespoons (45 ml) cornstarch
  • 1/2 teaspoon (2.5 ml) ground cinnamon
  • 2 cups (500 ml) unsweetened applesauce

Preparation

  1. With the rack in the middle position, preheat the oven to 190 °C (375 °F). Butter a 20-cm (8-inch) square baking dish and line it with a strip of parchment paper, letting it hang over each side.

Oatmeal Crisp

  1. In a bowl, combine the oats, flour, and brown sugar. Add the butter and maple syrup. Combine with a wooden spoon. Put the bowl aside.

Apple Filling

  1. In a small saucepan, combine the brown sugar, cornstarch, and cinnamon. Add the applesauce and bring to a boil, stirring with a whisk. Place the pan aside.
  2. Spread half the crisp in the baking dish and press lightly. Spread the apple filling on the crisp. Gently sprinkle with the remaining crisp.
  3. Bake for about 45 minutes or until the crisp is golden brown. Serve warm or cold. Cut into squares. Delicious with a scoop of vanilla ice cream.
