- Rinse the lentils under cold running water. In a saucepan, bring the water to a boil with the lentils. Simmer over medium heat for 30 to 35 minutes or until the lentils are tender. Drain and let cool in a large bowl.
- Add the remaining ingredients. Season with salt and pepper. Toss to combine. Serve or cover and refrigerate overnight.
