  • Citrus Vinaigrette

    • 1 orange, grated zest only
    • 1 lemon, grated zest only
    • 3 tablespoons (45 ml) orange juice
    • 3 tablespoons (45 ml) lemon juice
    • 1 tablespoon (15 ml) Dijon mustard
  • Salad

    • 1/2 lb (225 g) tubetti or other short pasta
    • 1 1/2 cups (375 ml) arugula (optional)
    • 1 1/2 cups (375 ml) grated carrots
    • 1/2 cup (125 ml) pine nuts, toasted
    • 2 green onions, chopped
    • 1/4 cup (60 ml) olive oil
    • Parmigiano-Reggiano shavings, to taste
    • Salt and pepper
