    • 3 tbsp (45 ml) olive oil
    • 2 tbsp (30 ml) lemon juice
    • 2 tbsp (30 ml) oil-packed pitted black olives, drained and finely chopped
    • 2 tbsp (30 ml) chopped parsley
    • 1 tsp (5 ml) sugar
    • 1 tsp (5 ml) Dijon mustard
    • 1/2 tsp (2.5 ml) dried oregano

    • 4 tomatoes, cubed
    • 1 English cucumber, cubed
    • 1 yellow bell pepper, seeded and cubed
    • 3/4 cup (90 g) feta cheese, diced
    • 1/2 cup (80 g) red onion, thinly sliced

For a milder onion flavour, let the onion soak in a bowl of cold water for about 10 minutes.
