"Snowball" Cookies

  1. With the rack in the middle position, preheat the oven to 350 °F (180 °C). Line two baking sheets with parchment paper.
  2. In a large bowl, combine all the ingredients with a wooden spoon.
  3. With slightly wet hands, shape the coconut mixture into 1-inch (2.5 cm) balls (about 1 tbsp each). Place the balls on the baking sheets, spacing them evenly.
  4. Bake one sheet at a time for about 10 minutes or until the cookies begin to brown. Let them cool on the baking sheets.

Note

To give a snowy look to your cookies, dust them with icing sugar using a small sieve.

  1. In your Best cookies book it says 280gr of sweetened shredded coconut and here it says 400gr of unsweetened shredded coconut so I am confused which one is right? And everybody thinks we should use more flour the quantities listed still incorrect it says 1/4 cup..

  2. I modified the flour ( 1 cup instead) and still runny. Was not able to make balls. I will try next time with 1/2 can of condensed milk.

  3. The flour quantity is still wrong. Need at least a cup.

  4. I was soo excited but as mentionned about, qty is not right to forma balls. Should it be 1 1/4 cups flour?

  5. The recipe in the magazine includes flour and egg whites and cannot be formed into balls as it is too runny. This is different.
