Apple and Molasses Muffins

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Line 18 muffin cups with paper or silicone liners.
  2. In a bowl, combine the flour, baking powder, baking soda and spices.
  3. In a large bowl, whisk together the eggs, brown sugar, milk, oil and molasses. Add the cereal and let soak for 5 minutes. Add the dry ingredients all at once and stir with a spatula, just enough to moisten the flour. Stir in the apples.
  4. Using a 1/3-cup (75 ml) ice cream scoop, spoon the batter into the muffin cups. Bake for 25 minutes or until a toothpick inserted in the centre of a muffin comes out clean. Let cool on a wire rack.


  1. Very delicious muffins. Will put some in freezer. Perhaps a little too sweet. Will try with just 1/2 cup of sugar next time.

  2. Fantastic muffins! But who makes 18 muffins? I scooped all the batter in a 12-muffin tin. They turned out pretty large and needed an extra 5 minutes to cook. I used 3 apples finely chopped. Great recipe, will make it again.

  3. Excellent! Looked like a ton of apples but, when baked, all proportions are spot on.

  4. These are wonderful muffins. Lots of flavour and loved all the apple in them and the All Bran. They are very moist, but cooked perfectly all the way through. I'll be making them again and again.

  5. My usband and ny 2 toddlers eat it and ask me to keep that ricepe. I do the mixture with all the apple. At first I was not sure. It look like there is far too many apples, like Diane say. I try it anyway. What a good surprise to see the muffin cook perfectly even with all those apples. Super moist, good look and verry good taste. With the All Bran a was suspicious! :-).

  6. Excellent, the whole family loved them! I only used 2 small Granny Smith apples and it was the perfect amount.

  7. Although I didn't add all the apple, there were still far too many apples. I would have appreciated that the recipe have a weight measurement for the apples...apples come in all sizes :) The muffins, don't have enough flavor, in my opinion...apples probably didn't have enough flavor. I'm not sure that I would bake these again.
