In a saucepan, brown the onion in the butter. Season with salt and pepper. Add the garlic and paprika and cook for 1 minute. Deglaze with the bourbon.
Add the remaining ingredients and bring to a boil. Simmer for about 15 minutes or until the sauce is syrupy. Stir frequently. Adjust the seasoning. If desired, purée the sauce until smooth in a blender.
Serve with spit-roasted pork, pork chops or tenderloin, or in a hamburger.
