Slow Cooker Asian-Style Beef Stew

  1. In a slow cooker, combine the cornstarch with the soy sauce and ketchup. Add the remaining ingredients except for the squash and bell pepper. Season with pepper. Stir and top with the squash.
  2. Cover and cook on low for 8 hours. Add the bell pepper and combine.
  3. Serve with rice.


  1. Great flavors with the cinnamon and star anise. I would wrap in cheese cloth next time in order to fish out easily. I made a few changes to make the dish almost paleo. Substituted coconut amino for the soy sauce, tomato paste for the ketchup and replaced the brown sugar with organic honey.

  2. This was very good! I used spaghetti squash and it melted into the sauce. My kids loved it and had no idea how healthy it was :)
