  1. In a bowl, combine all the ingredients. Season with salt and pepper.

  1. Top each cucumber slice with about 5 ml (1 teaspoon) of the shrimp mixture and place in a serving dish. Sprinkle with the herbs.

Note

You can also serve the shrimp mixture in store-bought hors d’oeuvre crispy shells. The shrimp topping can be made one day ahead and kept refrigerated.

  1. A delicious and easy way to serve shrimp to guests without the banal shrimp ring! Don’t skip the carrots-they add an unexpected crunch and sweetness to the recipe. I also have made this adding chopped fresh dill and a squeeze of lemon for guests who don’t like the tiniest bit of heat (from the harissa). A keeper recipe that everyone loves!

  2. EXCELLENT! This tastes divine and will impress your company! Make sure to use cooked shrimp. I could not find Harissa sauce, so I substituted Sriracha instead, and it worked extremely well. Go easy on the mayonnaise, or else the mixture will be too runny.
