Aromatic Salt

  1. In a mortar or coffee grinder, grind the peppercorns with the thyme and rosemary. Add the salt and crush. Set aside.


  1. Preheat the grill, setting the burners to high. Oil the grate.
  2. Thread the meat onto the skewers, alternating between pork and beef cubes. Season the skewers with herb salt.
  3. Grill the skewers for 3 to 4 minutes on each side for medium rare, or until the desired doneness.


Store any remaining aromatic salt in an airtight container. It can be used to season meat, fish and vegetables.
