Pork and Beef Brochettes with Aromatic Salt

Ingredients

• Aromatic Salt

  • 2 tsp black peppercorns
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/4 cup (60 g) kosher salt (or coarse sea salt)

• Brochettes

  • 1 small pork tenderloin, about 3/4 lb (350 g), cut into cubes
  • 3/4 lb (340 g) beef tenderloin, cut into cubes
  • 4 wooden skewers, soaked in water for 30 minutes, or metal skewers
