Caramel and Nut Fudge

Ingredients

  • 2 1/2 cups (625 ml) sugar
  • 1/4 cup (60 ml) bourbon or water (see note)
  • 1/4 teaspoon (1 ml) baking soda
  • 1/4 cup (60 ml) unsalted or salted butter
  • 2 cups (500 ml) chopped walnuts, toasted or pecans
