Zucchini and Feta Bruschetta

  1. In a skillet, gently soften zucchini and shallot in oil, without browning. Add basil. Season with salt and pepper. Set aside in a bowl.
  2. With the rack in the highest position, preheat the oven’s broiler.
  3. Place bread slices on a baking sheet. Oil lightly. Broil on each side.
  4. Just before serving, spread hummus on the toasted bread and cover with zucchini mixture. Sprinkle with feta cheese.
