    • 4 1/2 cups (675 g) unbleached all-purpose flour
    • 8 tsp (40 ml) sugar

    • 2 tsp Instant Yeast
    • 2 tsp salt
    • 2 cups (500 ml) warm water

You can refrigerate the balls of dough for up to 48 hours at this point. Let sit out at room temperature for 1 hour before rolling out.

You can also freeze the balls of dough. Once frozen, cover tightly in plastic wrap and store in an airtight container. Before using, let the frozen balls of dough thaw out in the refrigerator. Once thawed, let sit out in a warm, humid spot for 1 hour.
