Poached Chicken and Italian-Style Chicken Broth

  1. In a large pot, place all ingredients and cover with water. Season with salt and pepper. Bring to a boil.
  2. Skim, if desired. Simmer over low heat for about 2 hours or until chicken is fork tender. Strain broth.
