Watermelon and Lime Granita

Preparation

  1. In a saucepan, bring the water and sugar to a boil, stirring until the sugar has dissolved. Let cool.
  2. In a flat 8-cup (2 litre) airtight container, combine the watermelon juice and lime juice. Add the syrup and mix thoroughly.
  3. Cover and freeze for 6 hours or until completely frozen.
  4. Using a fork, scrape the granita into icy crystals. Serve immediately in chilled bowls.

Note

To obtain 2 cups (500 ml) of watermelon juice, process 4 cups (1 litre) of seedless watermelon cubes in a blender.
