2 large Spanish onions, thinly sliced
60 ml (¼ cup) olive oil
60 ml (¼ cup) chopped parsley
5 ml (1 tsp) capers, drained and chopped
8 fillets anchovy, chopped
1 bay leaf
2 cloves
1.5 kg (3 lb) boneless beef blade, cut into 2.5 cm (1-inch) cubes
Salt and pepper
Preparation
In a bowl, combine the onions, oil, parsley, capers, anchovies, bay leaf and cloves. Season with salt and pepper.
In the cavity of a slow cooker, spread a third of the onion mixture. Layer with half of the meat. Cover with another third of the onions and the remaining meat. Finish with the remaining onions.
Cover and cook on Low for 8 hours. Serve with mashed potatoes and a green vegetable.
