Ingredients: 30 ml (2 tbsp) lemon juice; 1 egg yolk; 5 ml (1 tsp) Dijon mustard; 1/2 clove garlic, finely chopped; 60 ml (1/4 cup) butter, melted; 60 ml (1/4 cup) canola oil; Salt and pepper

5 ml (1 tsp) Dijon mustard
1/2 clove garlic, finely chopped
60 ml (1/4 cup) butter, melted
60 ml (1/4 cup) canola oil
Salt and pepper

Preparation

In a bowl, combine the lemon juice, egg yolk, mustard and garlic with a whisk. Slowly drizzle in the melted butter, drop by drop, whisking constantly.
When the mayonnaise begins to set, drizzle in the oil, whisking constantly. Season with salt and pepper. Add a little water, if needed, if the mayonnaise seems too thick.
