- In a bowl, combine the lemon juice, egg yolk, mustard and garlic with a whisk. Slowly drizzle in the melted butter, drop by drop, whisking constantly.
- When the mayonnaise begins to set, drizzle in the oil, whisking constantly. Season with salt and pepper. Add a little water, if needed, if the mayonnaise seems too thick.
This mayonnaise is delicious with lobster, in a potato salad or to garnish a hamburger.
