- Preheat the grill, setting the burners to high. Oil the grate.
- Lightly oil and season the meat with salt and pepper. Grill the meat for 3 to 4 minutes on each side or until medium-rare. Transfer to a plate and let rest for about 5 minutes. Thinly slice the meat.
- Spread the meat into a large serving platter. Garnish with the mango, cashews and herbs. Drizzle with the lime juice and olive oil. Sprinkle with a little pepper flakes.
In season, replace the mango with 2 persimmons. Rarely used in savoury dishes, persimmon, such as mango, goes very well with beef and fresh herbs.
