Roasted garlic is delicious. Its strong flavor mellows during the long cooking. In a small saucepan, bring 8 cloves garlic, halved and germ removed, to a boil with 45 ml (3 tablespoons) of olive oil. Reduce the heat to low and simmer for 20 minutes. Remove from the heat and set aside.
