    • 2 tsp cornstarch
    • 1 tsp white vinegar
    • 1/2 tsp water
    • 1 pinch ground cinnamon
    • 1 pinch ground ginger
    • 1 pinch ground nutmeg
    • 4 egg whites, at room temperature
    • 1 cup (210 g) sugar
    • 4 oz (117 g) dark chocolate, melted and tempered (optional)

Preparation

This recipe calls for two racks in the middle position. Place one just above the centre and one just below.

For meringues that stay dry longer, dip them entirely in the chocolate.
