In a saucepan, combine all the ingredients. Bring to a boil and simmer over medium heat for about 45 minutes, stirring frequently. Cool. Cover and refrigerate for 12 hours.
In a bowl, combine all the ingredients. Add the chicken. Cover and refrigerate, ideally for 12 hours.
Remove the chicken from the marinade and pat dry. Oil the peaches, zucchini and chicken. On the grill or in a ridged skillet, grill the chicken for 5 to 6 minutes per side or until cooked through. Keep warm. Grill the peaches flesh side down for 8 to 10 minutes and the zucchini for about 2 minutes per side or until tender.
Serve with peach ketchup.
The amount of ketchup is more than enough to serve with this dish. Keep the remaining ketchup in the refrigerator or in the freezer, it would be equally delicious with lamb kebabs.
