Rum Marinated Chicken with Peach Ketchup

Ingredients

• PEACH KETCHUP

  • 2 peaches, unpeeled and diced
  • 1 tomato, diced
  • 1 onion, chopped
  • 2/3 cup (150 ml) sugar
  • 2/3 cup (150 ml) white wine vinegar
  • 1 teaspoon (5 ml) ground ginger
  • 1 teaspoon (5 ml) mustard seeds, crushed

• MARINADE

  • 1/4 cup (60 ml) dark rum
  • 1 tablespoons (15 ml) honey
  • 1 tablespoon (15 ml) chopped fresh ginger
  • 2 cloves garlic, finely chopped
  • 1 teaspoon (5 ml) chopped fresh thyme
  • 1/2 teaspoon (2.5 ml) salt
  • 4 skinless, boneless chicken breasts
  • 3 tablespoons (45 ml) olive oil
  • 2 ripe peaches, halved and pitted
  • 2 zucchini, cut into 1/4-inch (1/2-cm) slices
