- With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the slices of bacon on the baking sheet. Bake for about 15 minutes or until the bacon is crispy. Remove from the oven and place the bacon between two layers of paper towels.
- Spread the mayonnaise on the toast. On two pieces of toast, place the bacon, lettuce and tomatoes. Season with salt and pepper. Close the sandwiches with the remaining pieces of toast.
