Soak the plank as explained under “The ABCs of planking.”
In a baking dish, combine all the ingredients for the selected marinade. Season with pepper. Add the fish and turn to coat. Cover and refrigerate for 2 hours.
Preheat the grill, setting the burners to medium; if the grill has a thermometer, it should read about 180°C (350°F). Place the plank on the grill and heat for 3 to 4 minutes. Place the salmon on the plank. Close the grill’s cover and cook for about 30 minutes.
