- In a small non-stick skillet over medium heat, cook the egg in half of the butter. Season with salt and pepper.
- Preheat the waffle iron (see note). Spread the remaining butter on one side of each bread slice. On the unbuttered side, layer half of the cheese, the egg and then the remaining cheese. Close the sandwich and place in the waffle iron. Close the machine and cook for 3 to 4 minutes or until the bread is crisp and the cheese has melted.
- Cut into quarters and serve immediately.
You can also make this grilled cheese sandwich in a skillet or panini grill.
