One-Pot Burrito Casserole

  1. With the rack in the middle position, preheat the oven to 450°F (230°C).
  2. In a large ovenproof skillet over medium-high heat, soften the onion and garlic in the oil. Add the meat, breaking it up with a wooden spoon, and cook until golden brown.
  3. Add the rice, beans, tomatoes, broth, jalapeno and spices. Season with salt and pepper. Cover and cook over medium-low heat for 15 minutes, stirring occasionally, or until the rice is cooked and all the liquid has been absorbed.
  4. Sprinkle the cheese over the rice. Bake for 10 minutes or until the cheese has melted. Let cool for 10 minutes.
  5. Meanwhile, place the tortilla pieces on a baking sheet. Bake for 5 to 8 minutes or until crisp and lightly browned.
  6. Sprinkle the burrito casserole with cilantro. Serve with the tortilla chips and sour cream, if desired.

  1. I found the chili to be too overpowering. Nearly blew my head off. I might put in 1 tsp of chili powder next time rather than 1tbsp

  3. Made this tonight a I had all the ingredients at home minus the cilantro or sour cream. The dish turned out delicious. Husband had 3 helpings! Will make again for sure.

  4. Very easy and tasty. Would serve with a salad. The toasted tortillas a great touch. Yum.

  5. Easy, and with store cupboard ingredients= perfect for a school night and the girls loved eating with nachos- variation on the tortillas (artistic license)
