  1. In a pot of salted boiling water, cook the pasta until al dente. Set aside 1/2 cup (125 ml) of the cooking water. Drain the pasta.
  2. Meanwhile, in a large skillet over medium-high heat, brown the sausage meat in the oil, breaking it up with a wooden spoon as it cooks.
  3. Add the zucchini, garlic and pepper flakes. Continue cooking, stirring constantly, until the zucchini is al dente.
  4. Add the tomato, cooked pasta and reserved cooking water. Season with salt and pepper. Mix well to combine. Sprinkle with the cheese and basil.

We love vesuvio pasta, spiral pasta named after Mount Vesuvius. If unavailable, opt for fusilli.

  1. I'm 77 & still do . not recognize pasta shapes by their name, & living in a small town, & limited access to specialty stores, little chance to purchase uncommon shapes. It would b so helpful for recipe writers to include a simple diagram of the recommended pasta. Thank you.

  2. Couldn't find mild Italian sausages. Substitued hot. The dish was great, but too hot. Next time, I'll have to make sure to use mild sausages.

  3. Would like to see more recipes made with spiralizer vegetables.
