1 cup (180 g) pitted and diced dates

1/4 tsp salt
2 eggs
1 1/4 cups (310 ml) milk
1 tbsp (15 ml) maple syrup
1/2 tsp (2.5 ml) vanilla extract

Date Spread
In a saucepan over medium heat, bring the water and dates to a boil. Simmer for 5 minutes or until the dates are soft and tender.
In a blender, purée the dates until smooth. Pass through a sieve to remove any lumps, if desired.
Citrus
On a work surface, trim off both ends of the fruits. Cut off the peel down to the flesh, then slide the knife between each membrane to remove the segments or cut crosswide into rounds.
Crepes
In a bowl, combine the flour and salt. Whisk in the eggs, milk, maple syrup and vanilla until smooth.
In a lightly buttered 8-inch (20 cm) non-stick skillet over medium heat, cook the crepes, one at a time. Use 1/4 cup (60 ml) of batter for each. Cook until golden brown on both sides. Set aside on a plate and keep warm.

Smear the date spread over each crepe and roll them up. Serve with the citrus fruits.
