  1. Using a mortar and pestle, roughly grind the juniper berries, the coriander seeds, the fennel seeds and the cardamom pods. Place the spices in a pot. Add the sugar, the water and the lime juice.
  2. Bring to a boil over medium heat and let simmer for 5 minutes. Strain.
  3. Pour into an airtight container. Let cool, cover and refrigerate. The syrup will keep for 1 month in the refrigerator.

Note

Perfect for adding flavour to fruit salads, sparkling water, juices, cocktails or mocktails like our faux-gin fizz (see recipe).
