It's a shame to overlook lamb in the summer, because it’s actually so good on the grill. Served boneless, with a mustard barbecue sauce and a baby kale salad, the result is both refined and rustic.

    • 3 tbsp (45 ml) lemon juice
    • 1 tsp dried oregano
    • 1 tsp salt
    • 1/2 tsp crushed red pepper flakes
    • 3 garlic cloves, chopped
    • 1 leg of lamb, deboned, about 2.2 lb (1 kg), 1 1/2 inches (4 cm) thick
