- In a large bowl, combine the garlic scapes, vinegar, sugar and salt. Let sit for 5 minutes.
- Drizzle in the oil while whisking vigorously until emulsified. Season with pepper.
- With a knife or on a mandoline, finely slice the asparagus and radishes. Add to the bowl of dressing and toss to coat.
- Add the remaining ingredients and toss. Season with salt and pepper. Divide the salad among four plates and serve.
