In the same pot over medium heat, soften the onions and garlic in the oil. Add the apricot juice, jam and spices. Return the pork to the pot. Bring to a boil. Cover and cook for 3 hours in the oven or until the meat begins to shred apart, turning over twice during the cooking process. Remove the cover. Turn the pork fat side up and drizzle with the cooking liquid. Cook, uncovered, for another 30 minutes.
