Preparation
With the rack in the middle position, preheat the oven to 230 ° C (450 ° F). Line a baking sheet with parchment paper and brush with butter.
With a mandolin, thinly slice each potato to get 24 fairly translucent slices. However, do not make them too thin or they will tend to shrink and tear while baking.
Place half the slices on the baking sheet. Brush with butter. Place an herb leaf in the centre of each slice and cover with another slice. Brush again with butter. Season with salt.
Bake for 6 to 7 minutes per side, until the potatoes are golden brown.
