1/4 cup (60 ml) soy sauce
1/4 cup (60 ml) lime juice
2 tbsp (30 ml) fish sauce
1 tbsp sugar
1/2 tsp (2.5 ml) red curry paste
Beef
1 lb (450 g) lean ground beef
2 tbsp (30 ml) vegetable oil
2 tbsp fresh ginger, finely chopped
2 tbsp lemongrass, finely chopped
2 garlic cloves, chopped
2 bird’s eye chili peppers, seeded and finely chopped
2 tbsp (30 ml) fish sauce
Bowl
1 package (300 g) rice vermicelli
3 cups (255 g) red cabbage, thinly sliced on a mandoline
3 Lebanese cucumbers, cut into rounds
3 green onions, thinly sliced
3 cups (225 g) bean sprouts
1 cup (30 g) cilantro leaves
1 cup (20 g) mint leaves
Preparation
Sauce
In a bowl, combine all of the ingredients. Set aside.
Beef
In a large skillet over high heat, brown the beef in the oil, breaking it up with a wooden spoon. Add the ginger, lemongrass, garlic and chili peppers. Cook for 1 minute while stirring. Add the fish sauce and cook for 30 seconds. Keep warm.
Bowl
In a pot of boiling water, add the vermicelli. Remove from the heat and let sit for 3 minutes or until the noodles are tender. Drain and rinse in cold water. Drain well. Cut the noodles into three shorter pieces. Set aside.
In a large serving dish, arrange the vermicelli, vegetables, herbs and beef. Serve with the sauce and let everyone build their own bowl.
