  1. In a bowl, combine all of the ingredients. Set aside.

Beef

  1. In a large skillet over high heat, brown the beef in the oil, breaking it up with a wooden spoon. Add the ginger, lemongrass, garlic and chili peppers. Cook for 1 minute while stirring. Add the fish sauce and cook for 30 seconds. Keep warm.

Bowl

  1. In a pot of boiling water, add the vermicelli. Remove from the heat and let sit for 3 minutes or until the noodles are tender. Drain and rinse in cold water. Drain well. Cut the noodles into three shorter pieces. Set aside.
  2. In a large serving dish, arrange the vermicelli, vegetables, herbs and beef. Serve with the sauce and let everyone build their own bowl.
