Chicken and Vegetable Stir-fry

  1. In a wok or large skillet, stir-fry the chicken in half the oil over high heat. Season with salt and pepper. Set aside.
  2. In the same wok, sauté the onions, garlic, snow peas and bell pepper in the remaining oil for about 2 minutes. Add the remaining vegetables and stir-fry over high heat for about 2 minutes.
  3. In a bowl, blend the remaining ingredients. Add to the crisp vegetables, stirring until it thickens. Toss in the chicken. Serve immediately.


  1. A great stir fry with colour, flavour, and veggies. We used broccoli, carrots, red and yellow peppers and sugar snap peas! We served it over rice. Everyone enjoyed the meal. My only suggestion would be to make more sauce as this recipe provides enough to cover the veggies, but we like more to incorporate into the rice or noodles!

  2. This meal was a big hit. Everyone loved it and the leftovers were devoured the day after. Will definitely do this again.
