In a pot of boiling water, cook the noodles for 3 minutes or until al dente. Stir well to prevent the noodles from sticking together. Drain and rinse quickly in cold water. Set aside.
In a large non-stick skillet over medium heat, cook the garlic and red pepper flakes in the butter while stirring. Add the soy sauce and brown sugar. Add the noodles and toss to coat. Push the noodles to one side of the skillet. Pour the eggs into the empty side of the skillet and cook without stirring for 2 minutes or until the omelette is cooked but still slightly runny.
Using a wooden spoon, break the omelette into pieces. Add the green onion. Quickly stir everything together and serve in a bowl. Sprinkle with the everything bagel seasoning to taste.
Since this recipe comes together quickly, make sure to have all of your ingredients prepared and close at hand before starting to cook the noodles.
Add sautéed mushrooms or blanched broccoli florets, if desired.
