    • 1/4 cup (60 ml) red wine vinegar
    • 1/4 cup (30 g) finely chopped shallots
    • 1/4 cup (10 g) chopped oregano
    • 1/4 cup (10 g) chopped cilantro
    • 2 tbsp chopped flat-leaf parsley
    • 1 tbsp chopped thyme
    • 1 tbsp finely chopped garlic
    • 1 tbsp crushed red pepper flakes, or to taste
