Banana-Oatmeal Pancakes

Ingredients

    To prepare in advance

  • ¾ cup (115 g) unbleached all-purpose flour
  • 1 tsp baking powder
  • 1 pinch salt

    To cook on-site

  • 2 ripe bananas
  • ½ cup (125 ml) unsweetened oat beverage (see note)
  • Butter, for cooking
  • Honey or maple syrup, for serving

Preparation

To prepare in advance

  1. In a container or resealable bag, combine the flour, baking powder and salt.

To cook on-site

  1. When ready to make the pancakes, in a bowl, mash the banana with a fork. Add the oat beverage and dry ingredients. Mix until smooth.
  2. Place a skillet over medium heat. Once the skillet is hot, lightly brush with butter. Cook two pancakes at a time, using about ¼ cup (60 ml) of the batter for each one. Use the back of a spoon to spread out the batter slightly. Cook for 2 minutes on each side or until nicely golden. Serve with honey or maple syrup and banana slices, if desired.

Note

For backcountry camping without a cooler, use an individual serving of oat beverage.
