- In a bowl, combine all of the ingredients. Let marinate for 10 minutes. Drain.
Beef and Noodles
- Meanwhile, in a large non-stick skillet over medium-high heat, cook the beef and onion in the oil, breaking the meat up with a wooden spoon, until golden. Add the spices and cook for 1 minute while stirring. Keep warm.
- In a pot of boiling water, cook the udon until tender, about 3 to 4 minutes. Drain.
- Add the noodles, tamari and maple syrup to the skillet. Toss to coat the noodles in the sauce.
- Serve the noodles in bowls. Garnish with the pickled vegetables and sprinkle with the sesame seeds.
