Fig and Bay Leaf Syrup

  1. In a small pot, bring the water, sugar, figs and bay leaves to a boil. Simmer for 3 minutes. Pour into a bowl and let cool. Cover and refrigerate until completely chilled, about 1 hour. Strain through a sieve. Compost the aromatics. There will be enough syrup to prepare four cocktails.

  1. In a cocktail shaker, vigorously mix a few ice cubes with the fig syrup, lemon juice, brandy and vanilla liqueur.
  2. Strain the mixture into a lowball whisky glass filled with crushed ice. Garnish with a bay leaf and a slice of fig.


Fresh bay leaves are available in most grocery stores packaged in small containers among the other fresh herbs.
