Oatmeal and Dried Fruit Confit with Orange Juice

  1. In a small pot over medium-high heat, bring the dried fruits and orange juice to a boil. Simmer for 5 minutes or until the liquid has almost completely evaporated. Transfer the mixture to a bowl and let cool.
  2. In another pot, bring the oat beverage, oats, maple syrup and cinnamon to a boil while stirring constantly. Simmer for 1 minute. Remove from the heat and let sit for 2 minutes. Adjust the consistency with more oat beverage, as needed
  3. Serve the oatmeal in bowls. Top with the peanut butter, dried fruits, orange pieces and pumpkin seeds.


In this recipe, natural peanut butter as its texture blends well with the oatmeal in every spoonful.
