In a bowl, combine all the ingredients. Set aside.
In a large skillet or wok over high heat, stir fry the chicken in the oil. Season with salt and pepper. Add the onion, bell pepper and stir-fry for about 3 minutes. Add the garlic and sauce and simmer gently until the chicken is cooked through and the sauce has thickened. Adjust seasoning.
Serve over basmati rice.
