Ingredients: 24 frozen mini hash browns; 1 very ripe avocado; 1/4 cup (60 ml) cream cheese, softened; 2 tbsp dill, finely chopped; 1 tbsp (15 ml) lemon juice; 1/2 small red onion, thinly sliced; 4 Boston lettuce leaves, each cut into 4 pieces; 1 package (120 g) sliced smoked salmon, cut into 16 pieces; 8 slices cooked bacon, each cut into 4 pieces; 1 Lebanese cucumber, sliced into thin rounds on a mandoline

Preparation

Hash Browns
- Place half of the hash browns in the basket of an air fryer, evenly spaced out. Cook for 5 to 7 minutes at 400°F (200°C) or until golden, flipping them over halfway through. Keep warm.
Avocado Cream Cheese Spread
- Meanwhile, in a bowl, purée the avocado with a fork. Add the cream cheese, dill and lemon juice. Season with salt and pepper. Mix well.
Assembly
- Soak the onion in a small bowl of cold water for 5 minutes. Drain.
- For each sandwich, cover 2 hash browns with avocado spread. Garnish with onion, lettuce, salmon, bacon and cucumber. Stack the two garnished hash browns on top of each other and cover with a third hash brown. Insert a large toothpick through the sandwich. Repeat with the remaining ingredients.
