The terrine can be prepared the day before serving. Be sure to thoroughly cover the surface of the mousse with plastic wrap to prevent oxidization and to preserve its beautiful pink colour.

Dipping your knife in hot water then wiping it dry between each use will give you very clean, well-defined slices.
